
With a growing need for a food system in which the food we eat is good for us, clean for the planet, and fair for producers; Laura and her team at "Koji es Transformación" were borne to develop the food innovative brands that can transform our Agrifood System. They are a Foodtech specialized in creating the food products of tomorrow, through a food Design Laboratory. Behind their brands, there are processes of innovation, sustainability, and connection with communities. They start with redesigning one of the most well-known and controversial fast food products, the beef burger. Their first brand "Koji Burger" is focused on a food product with unprecedented taste and flavor thanks to the power of Koji, the key ingredient in Japanese cuisine. These attributes are given to our burger by aging sustainably and regenerative livestock-sourced grass-fed beef with a process that naturally enhances the umami flavor in beef and is 90% more efficient compared with standard beef aging practices such as dry-aged process.
