Did you know that by 2050, people will be eating insect-derived biofoods, like chicken meat is consumed today in Ecuador, or pork meat in the world? According to the UN, the world population is expected to reach 9.7 billion in 2050, meaning almost 40% more of the current value. Population growth, combined with climate change and environmental damage, will generate a greater demand of food within a few years, which will not be supplied. Insects represent the food source with the highest profitability and nutritional value that can replace animal meat, and even surpass its protein value. Insect production generates 100 times less greenhouse gases than animal meat production, uses 14 times less land and 5 times less water. In addition, they produce twice as much food per kg of feeding stuff. Finally, insects feed on organic by-products, which means they also manage environmental pollution while growing. Insects are not only a new eco-sustainable food source for humans, but also for animals, as they can be a protein supplement in feed for livestock, poultry, pork, and fish farming. Insect protein reduces human and animal malnutrition and saves the planet! In 2020, Sofia and her team decided to create Ecological Food Sense, called Allikay FoodTech, and seeks to revolutionize the food industry from the sustainable use of industrial and domestic organic waste, with the support of the DIY movement, and the implementation of biotechnology and the internet of things.
